Degassing
The release of carbon dioxide from freshly roasted beans over the days and weeks after roasting.
Too much gas makes brewing uneven, which is why many roasters suggest resting beans a few days for filter and a week or more for espresso. One-way valves on coffee bags let the gas out without letting oxygen in.
