Natural Process

Also known as: dry process, natural processing, natural-processed

A processing method in which whole coffee cherries are dried in the sun before the beans are removed, often producing fruity, wine-like flavors.

Natural, or dry-processed, coffees dry for several weeks on patios or raised beds and must be turned often to prevent mold. It is the oldest processing method and is common in Ethiopia, Yemen and Brazil.
