Cupping

The standardized tasting method professionals use to evaluate coffee: grounds steep in bowls, the crust is broken, and the coffee is slurped from a spoon.

Cupping removes brewing skill from the equation so coffees can be compared side by side. Slurping sprays the coffee across the palate and up toward the nose, where most flavor is perceived.
