Crema

The golden-brown foam on top of a fresh espresso, made of carbon dioxide bubbles, emulsified oils and fine coffee particles.

Thick crema signals fresh coffee and good pressure, but it is not a guarantee of flavor — very fresh beans and robusta both produce lots of it. Crema tastes bitter on its own and fades within a minute or two.
