Microfoam

Steamed milk with tiny, uniform bubbles, giving a glossy, paint-like texture ideal for flat whites and latte art.

Good microfoam comes from a short stretching phase, when air is drawn into the milk, followed by a rolling phase that breaks big bubbles into tiny ones. Stop heating at about 55–65 °C, where milk tastes sweetest.
