Cold Brew

Coffee steeped in cold or room-temperature water for many hours — usually 12 to 24 — producing a smooth, low-bitterness drink.

Cold brew is not the same as iced coffee, which is hot-brewed coffee that has been chilled. Because cold water extracts more slowly and selectively, cold brew tastes rounder and less acidic, and it is often made as a concentrate to dilute.
