Bloom

The first small pour of hot water over fresh grounds, which releases trapped carbon dioxide so the coffee bed puffs up and bubbles.

Freshly roasted coffee holds a lot of CO₂. Pouring roughly two to three times the coffee’s weight in water and waiting 30–45 seconds lets that gas escape, so later pours can extract evenly instead of being pushed away by bubbles.
