Roast Level
Also known as: roast degree
How far beans were roasted — from light to dark — which shapes their acidity, sweetness, body and bitterness.
Light roasts preserve origin character and brightness, medium roasts balance acidity with caramel sweetness, and dark roasts bring roasty, bittersweet and smoky flavors. Roast level is often measured by color, for example on the Agtron scale.
