Honey Process
Also known as: honey processed, honey processing
A processing method in which the skin is removed but some or all of the sticky fruit mucilage is left on the bean to dry, adding sweetness and body.
Costa Rican producers popularized names like yellow, red and black honey, which roughly track how much mucilage is left and how slowly the coffee dries. Honey coffees often sit between washed and natural coffees in flavor.
